Lemongrass, with its tall and fragrant stalks, is a favored herb in culinary and medicinal spheres alike. Its appearance is characterized by long, pale green leaves with bulbous lower ends, resembling reedy stalks. When fresh, the grass emits a citrusy fragrance which intensifies upon bruising or chopping. The flavor profile of Lemongrass is a vibrant blend of lemon zest and a hint of ginger. Popular in Asian cuisine, particularly Thai and Vietnamese dishes, its refreshing taste enhances soups, curries, teas, and cocktails. In addition to its culinary uses, Lemongrass is often found in aromatherapy and natural remedies due to its essential oils that are said to have soothing properties.
Nicolas Donck, a Belgium native, relocated to Georgia and started Crystal Organic Farm back in the mid-90's with a mission to grow healthy, organic produce. Many say he is singlehandedly responsible for introducing Atlantans to many plants of the endive and chicory varieties that were already popular in Belgium. Along the way, Nicolas helped found the Morningside Farmers Market and eventually met the love of his life, and now farm partner, Jeni Jarrard-Donck. Jeni brings an extensive knowledge of medicinal herb cultivation and usage to the partnership, making Crystal Organic one of the most well-rounded and diverse farms in the State.
