Rainbow Chard stands out in the greens department with its showcase of vibrant, multi-colored stalks - from bold pink to sunny yellow and deep red. Its broad, dark green leaves are delicately veined and possess a flavor profile that marries the bitterness of kale with the saltiness of spinach. A visual feast as well as a nutritional powerhouse, Rainbow Chard cooks down into a tender, buttery texture perfect for sautés, stews, and gratins. It's also delightful when chopped fresh in salads or as a colorful garnish. Rich in vitamins A, C, and K, as well as essential minerals like magnesium and iron, Rainbow Chard is as beneficial to health as it is striking on the plate.
