Dried Lemon Balm, a herb celebrated for its citrus-scented leaves, exudes a lemony fragrance and imparts a mild, sweet flavor with a hint of mint. With its dried, crinkled leaves ranging in color from yellow-green to dark green, Lemon Balm is a welcomed addition to a kitchen's herbal repertoire. It excels in a diverse array of culinary uses from steeping in hot water for a calming tea that soothes the digestive system to enhancing fruit salads, dressings, marinades, and desserts. In its dried form, it retains much of its aroma and is often incorporated into potpourris and herbal sachets. Lemon Balm is not just a culinary delight but may also harbor mild relaxant properties, perfect for reducing stress after a long day.
Nicolas Donck, a Belgium native, relocated to Georgia and started Crystal Organic Farm back in the mid-90's with a mission to grow healthy, organic produce. Many say he is singlehandedly responsible for introducing Atlantans to many plants of the endive and chicory varieties that were already popular in Belgium. Along the way, Nicolas helped found the Morningside Farmers Market and eventually met the love of his life, and now farm partner, Jeni Jarrard-Donck. Jeni brings an extensive knowledge of medicinal herb cultivation and usage to the partnership, making Crystal Organic one of the most well-rounded and diverse farms in the State.
