Kenny's take on an American classic, this is the farmstead version of what many of us grew up eating in our lunch boxes or on grilled cheese. Creamy and delicious with just a little bit of tanginess, it has a perfect amount of moisture to melt over a grilled burger or to bring depth to mac and cheese, not to mention the fact that it is all natural.

Kenny Mattingly was a dairy farmer before he became a cheese maker. In the late 1990's, the Mattingly's began making cheeses to serve their local region by way of farmer's markets and a few restaurants. All of the cheeses owe a good amount of credit to the high quality milk that still comes from the farm, where the milking parlor is still strategically placed adjacent to the creamery. They're committed to making interesting, flavorful cheeses with quality ingredients.
