Romanesco Broccoli captivates with its striking appearance, featuring a natural fractal pattern and vibrant chartreuse color. This visually stunning vegetable is characterized by spiraled peaks forming a conical shape, akin to a work of art. The texture is exceptionally crisp, and the flavor is delicately nutty, reminiscent of both broccoli and cauliflower, yet distinctly its own. Romanesco is suitable for a variety of cooking methods, including steaming, roasting, and sautéing. It maintains its firmness when cooked and adds an element of crunch to dishes. Whether intermingled with pasta, served as a side with a squeeze of lemon, or enjoyed raw in salads, Romanesco adds both aesthetic and culinary appeal to any meal. It provides a good source of vitamin C, vitamin K, fiber, and carotenoids, making it a nutritious choice that's as pleasing to the palate as it is to the eye.
Nicolas Donck, a Belgium native, relocated to Georgia and started Crystal Organic Farm back in the mid-90's with a mission to grow healthy, organic produce. Many say he is singlehandedly responsible for introducing Atlantans to many plants of the endive and chicory varieties that were already popular in Belgium. Along the way, Nicolas helped found the Morningside Farmers Market and eventually met the love of his life, and now farm partner, Jeni Jarrard-Donck. Jeni brings an extensive knowledge of medicinal herb cultivation and usage to the partnership, making Crystal Organic one of the most well-rounded and diverse farms in the State.
