The Watermelon Radish, named for its striking resemblance to a watermelon, enchants with its vibrant pinkish-red heart surrounded by a layer of pale green and white. This root vegetable, an heirloom variety of the daikon radish, greets the eye with its round shape and smooth exterior. The flesh, crisp and firm, offers a mildly sweet and peppery flavor that is less pungent than its smaller radish relatives. These colorful radishes can add a visual pop to any plate, whether sliced thinly for salads, pickled for a tangy condiment, or roasted to enhance their natural sweetness. Besides their visual appeal, Watermelon Radishes are a nutritious choice, providing vitamin C, potassium, and antioxidants that contribute to a healthful diet.
Nicolas Donck, a Belgium native, relocated to Georgia and started Crystal Organic Farm back in the mid-90's with a mission to grow healthy, organic produce. Many say he is singlehandedly responsible for introducing Atlantans to many plants of the endive and chicory varieties that were already popular in Belgium. Along the way, Nicolas helped found the Morningside Farmers Market and eventually met the love of his life, and now farm partner, Jeni Jarrard-Donck. Jeni brings an extensive knowledge of medicinal herb cultivation and usage to the partnership, making Crystal Organic one of the most well-rounded and diverse farms in the State.
