Decadent Mashed Potatoes

Prep/active time: 1 hour
Serves: 2-4



  1. Add potatoes to a large saucepan, cover with water by 1-2 inches. Add 1 Tbsp salt.
  2. Set burner to medium/low. Bring potatoes up to just below a simmer. Cook until you can spear them easily with a fork, about one hour.
  3. Combine milk, butter and garlic in a small saucepan. Bring to a boil, then remove from heat.
  4. Leave peels on and crush potatoes through a potato ricer. Alternatively, carefully peel potatoes when cool enough to handle, then mash with potato masher, sturdy whisk or fork.
  5. Remove garlic from the milk/butter mixture, then combine with the potatoes. Mix until creamy and smooth.
  6. Add salt and pepper to taste, and enjoy!
