Xocolatl's Single Origin bars are made of only two ingredients--cacao and organic cane sugar. That's it. They source premium cacao beans that have delicious, terroir-driven flavor profiles, then add only enough sugar to bring out the best expression of that profile.
Flavor notes: Brown sugar, baking spices caramel with underlying notes of dark fruits and tropical flowers. Medium-high complexity with a long finish.
Pairs well with: Pinot noirs, lattes, fruit cheese plates, a comfy armchair on a rainy day.
Sourcing info: Direct-sourced from CAC Pangoa, a coffee and cacao farmers cooperative that is organic and fair-trade certified in the Upper Amazon of Peru.

Organic cacao, organic cane sugar
Inspired by local chocolate makers in Costa Rica, Elaine & Matt flew back to Atlanta with bags packed full of Costa Rican cacao and spent the next year developing recipes, refining technique and reaching out to source raw cacao from different origins to highlight the ranging diversity of flavor naturally inherent in fine cacao. By late 2014, they opened a small micro-factory and retail store at the Krog Street Market and quickly became Atlanta's bean-to-bar craft chocolate company.
