Curly Endive, often referred to as frisée, is a chicory family member distinguished by its shaggy, frilly edged leaves with a bright green hue transitioning to a pale, almost yellow core. Its leaves offer a mildly bitter taste that adds complexity and depth to salads and garnishes. The textured layers of Curly Endive make it a visually appealing addition, creating volume and interest in any dish. It can also be lightly sautéed to reduce its bitterness and bring out a nuttier flavor, pairing wonderfully with sweet dressings, fruit, nuts, and rich cheeses. Additionally, Curly Endive brings a wealth of nutrients to the table, including vitamins A and K, fiber, and antioxidants.
Nicolas Donck, a Belgium native, relocated to Georgia and started Crystal Organic Farm back in the mid-90's with a mission to grow healthy, organic produce. Many say he is singlehandedly responsible for introducing Atlantans to many plants of the endive and chicory varieties that were already popular in Belgium. Along the way, Nicolas helped found the Morningside Farmers Market and eventually met the love of his life, and now farm partner, Jeni Jarrard-Donck. Jeni brings an extensive knowledge of medicinal herb cultivation and usage to the partnership, making Crystal Organic one of the most well-rounded and diverse farms in the State.
