Cacao Origin Information: This cacao is produced by smallholder farmers in Limon Province of Costa Rica, in the very region where the owners of Xocolatl got their chocolate-making start. The cacao is fermented and dried by a local Costa Rican farmer and bread baker who then ships the cacao to the US.

Inspired by local chocolate makers in Costa Rica, Elaine & Matt flew back to Atlanta with bags packed full of Costa Rican cacao and spent the next year developing recipes, refining technique and reaching out to source raw cacao from different origins to highlight the ranging diversity of flavor naturally inherent in fine cacao. By late 2014, they opened a small micro-factory and retail store at the Krog Street Market and quickly became Atlanta's bean-to-bar craft chocolate company.
