Collard Greens are a hearty staple in the leafy vegetable family, radiating a deep green hue with broad, sturdy leaves. Serving as a traditional side dish in Southern cuisine, collard greens are synonymous with slow-cooked, flavorful recipes often prepared with spices and savory meats. Adaptable to a variety of cooking methods, they shine in sautéing, braising, and steaming, demonstrating their ability to retain a firm texture and soak in rich flavors. Collards are a nutrient-dense choice, rich in vitamins A, C, and K, calcium, iron, and antioxidants. Whether enjoyed as part of a nutritious smoothie, a colorful wrap, mixed into a hearty stew, or simply as seasoned greens, they provide a substantial, satisfying addition to meals focused on healthful, comfort dining.
Hickory Hill Farm is all about family. Back in 1852, this 200+ acre plot was gifted to the family as part of a land grant for a relative's service in the Revolutionary War. Now the Certified Organic farm is run by Garry and Susan Shaw along with their daughter, Jennifer Johns, and her husband Josh. Altogether, four generations of the Shaw family are currently living on or working this plot of land. Not to mention their many chickens, hogs, sheep, cattle, and horses!
