Castelfranco radicchio is a striking Italian heirloom chicory known for its pale yellow to creamy white leaves, which are speckled with vibrant red and purple spots. Often referred to as the "orchid lettuce" due to its delicate and beautiful appearance, it has a mild, slightly bitter flavor that mellows when grilled or roasted. This variety is typically harvested in the cooler months, making it a popular winter green in Italian cuisine. Castelfranco radicchio is often used in salads, where its crisp texture and unique color add both visual and taste appeal. It's also a good source of vitamins K and C, as well as antioxidants.
