Lindale is a cow milk gouda made with specially selected cultures from Holland. Using traditional Dutch methods, they wash and cook the curd before pressing in the vat under the whey. This gives the cheese a remarkably smooth, creamy texture and sweet buttery flavor.
Lindale is matured in a cave for four to eight months, or more. As it ripens, it develops brothy and umami notes with a nice caramel finish.
