Heirloom Leeks, a cherished variety passed down through generations, boast elegant, elongated white shanks transitioning into lush, flat green leaves. These alliums are appreciated for their delicate, sweet flavor with just a hint of earthiness, softer and more refined than their onion counterparts. A beloved component in classic dishes such as potato leek soup, they also shine when lightly braised, caramelized to enhance their natural sugars, or added into savory pies and quiches. Heirloom Leeks can elevate the taste profile of stocks and broths, providing a subtle, aromatic base. Rich in vitamins A, C, and K as well as essential nutrients like folate and manganese, they are a healthful addition to any meal.
Nicolas Donck, a Belgium native, relocated to Georgia and started Crystal Organic Farm back in the mid-90's with a mission to grow healthy, organic produce. Many say he is singlehandedly responsible for introducing Atlantans to many plants of the endive and chicory varieties that were already popular in Belgium. Along the way, Nicolas helped found the Morningside Farmers Market and eventually met the love of his life, and now farm partner, Jeni Jarrard-Donck. Jeni brings an extensive knowledge of medicinal herb cultivation and usage to the partnership, making Crystal Organic one of the most well-rounded and diverse farms in the State.
