Evergreen Scallions, also known as green onions, are a crisp, versatile vegetable distinguished by their elongated shape and a delicate gradient of white at the base transitioning into vivid green tops. These slender alliums offer a mild, yet distinctly oniony flavor which is less assertive than that of their bulb onion cousins, adding a fresh, piquant taste to a diverse array of culinary creations. Evergreen Scallions can be finely chopped and sprinkled as a garnish over soups, salads, and grilled meats, or incorporated as a key aromatic in stir-fries, omelets, and salsas. They are equally delicious when grilled whole for a charred, yet succulent side dish. Rodgers Greens and Roots Farm is a certified organic farm, located 30 minutes southwest of Atlanta in Douglasville, Georgia, on 64 acres of historic farmland along the Chattahoochee River. Currently, 16 acres of flat clay-loam soil are under cultivation using organic practices. We primarily grow greens, roots, summer fruits, herbs and pasture raised meishan hogs.
