Cacao Origin Information: Direct-sourced from Cacao Bisiesto, a boutique cacao company that purchases beans from surrounding small-holder farmers in the highlands of Nicaragua in order to centrally ferment, dry and internationally market these fine flavor beans.

Inspired by local chocolate makers in Costa Rica, Elaine & Matt flew back to Atlanta with bags packed full of Costa Rican cacao and spent the next year developing recipes, refining technique and reaching out to source raw cacao from different origins to highlight the ranging diversity of flavor naturally inherent in fine cacao. By late 2014, they opened a small micro-factory and retail store at the Krog Street Market and quickly became Atlanta's bean-to-bar craft chocolate company.
