Green Tomatoes, identifiable by their smooth, firm, and shiny skin with a verdant hue, are a staple of Southern American cuisine. Serving as the star in the classic dish 'fried green tomatoes,' their tart and tangy flavor profile adds a zesty twist to any meal. Often harvested before ripening, they possess a crisp and slightly acidic taste that softens with cooking, contrasting beautifully with cornmeal coatings or creamy sauces. Green Tomatoes hold up well in heat, making them perfect for baking, grilling, or pickling. These unripe fruits are not just for frying; they're also excellent in salsas, chutneys, and as a unique addition to sandwiches and salads, providing a pop of color and a burst of flavor.
Nicolas Donck, a Belgium native, relocated to Georgia and started Crystal Organic Farm back in the mid-90's with a mission to grow healthy, organic produce. Many say he is singlehandedly responsible for introducing Atlantans to many plants of the endive and chicory varieties that were already popular in Belgium. Along the way, Nicolas helped found the Morningside Farmers Market and eventually met the love of his life, and now farm partner, Jeni Jarrard-Donck. Jeni brings an extensive knowledge of medicinal herb cultivation and usage to the partnership, making Crystal Organic one of the most well-rounded and diverse farms in the State.
