Lemon drop peppers, also known as "aji limon," are small, bright yellow chili peppers originating from Peru. These peppers have a distinctive citrusy flavor, with a hint of lemon zest that adds a refreshing brightness to dishes. Their heat level is moderate, typically around 15,000 to 30,000 Scoville Heat Units, which brings a pleasant kick without overwhelming other flavors. The peppers are slender, slightly wrinkled, and about two to three inches long, with a vibrant color that deepens as they ripen. Lemon drop peppers are popular in South American cuisine, often used to add depth to salsas, sauces, and marinades. When dried, they make a tangy, flavorful powder that enhances both savory and sweet recipes.
Nicolas Donck, a Belgium native, relocated to Georgia and started Crystal Organic Farm back in the mid-90's with a mission to grow healthy, organic produce. Many say he is singlehandedly responsible for introducing Atlantans to many plants of the endive and chicory varieties that were already popular in Belgium. Along the way, Nicolas helped found the Morningside Farmers Market and eventually met the love of his life, and now farm partner, Jeni Jarrard-Donck. Jeni brings an extensive knowledge of medicinal herb cultivation and usage to the partnership, making Crystal Organic one of the most well-rounded and diverse farms in the State.
