Maple Bacon Sweet Potato Mash

Preparation

  • Preheat the oven to 425. Rub whole sweet potatoes with oil, sprinkle with salt, and roast til soft to the touch and skin is papery— 25 – 60 minutes depending on size; 
  • When cool enough to handle, peel and roughly chop sweet potatoes; transfer them to a mixing bowl and add butter, brown sugar, cinnamon, cayenne and a pinch of salt. Mash/stir to your desired consistency. Taste, adjust spice and seasoning to your liking.
  • Meanwhile, render the chopped bacon over medium heat in a dry pan. When it’s to your crisp/chewy level of liking, drain off most of the fat, add the maple syrup and pecans. Give the mixture a stir and remove it from heat.
  • To serve, turn sweet potatoes out to a serving dish and spoon maple-bacon-pecan mixture evenly over the top
