Maple Bacon Sweet Potato Mash

Serves 2-4
Ingredients
- 1.5-2# organic sweet potatoes
- 1 T Georgia olive oil
- 1 T Sea Salt Banner Butter
- 1 T brown sugar
- Pinch cinnamon
- Tiny pinch cayenne
- 1 pack of Pine St. Market Bacon Ends or 2 slices Bacon, chopped into bite size pieces
- 2 T Blackberry Patch Maple Syrup
- ½ C toasted organic Double Q Pecans, chopped
- Salt + Pepper to taste
Preparation
- Preheat the oven to 425. Rub whole sweet potatoes with oil, sprinkle with salt, and roast til soft to the touch and skin is papery— 25 – 60 minutes depending on size;
- When cool enough to handle, peel and roughly chop sweet potatoes; transfer them to a mixing bowl and add butter, brown sugar, cinnamon, cayenne and a pinch of salt. Mash/stir to your desired consistency. Taste, adjust spice and seasoning to your liking.
- Meanwhile, render the chopped bacon over medium heat in a dry pan. When it’s to your crisp/chewy level of liking, drain off most of the fat, add the maple syrup and pecans. Give the mixture a stir and remove it from heat.
- To serve, turn sweet potatoes out to a serving dish and spoon maple-bacon-pecan mixture evenly over the top

- This is an easy formula for gussying up sweet potatoes, try other great topping combinations:
- brown butter/sage/balsamic
- walnuts/pomegranate seeds/pom-molasses/cilantro
- pine nuts/raisins/honey
