Beetroots, commonly referred to as beets, present a vibrant display with their deep fuchsia to purple hue, rounded shape, and a delicate, earthy sweetness. The smooth, firm exterior houses a richly colored flesh that bleeds an intense red when sliced. Beets are celebrated for their versatility in the kitchen; they can be roasted to caramelized perfection, boiled for a tender addition to salads, juiced for a nutritious drink, or even pickled for a tangy treat. They are highly regarded in both sweet and savory culinary circles, pairing well with citrus, cheese, nuts, and greens. Rich in essential nutrients, beets contribute folate, manganese, and potassium to one's diet, adding both flavor and healthful properties to any meal.
This cooperative's member farms are located all over West Georgia and are some of the best examples of the power of the co-op model. Since its founding in 1966, WGFC has traditionally consisted of black farmers. Their mission is to work together to build opportunities through local food systems and wealth through cooperative economics.
