Figment's first dual-fermented flavor, the Snow Bird recipe starts by making Tepache, a traditional Mexican beverage made by wild-fermenting entire pineapples with sugar (in this case, brown sugar) and cinnamon. The skins of the pineapples contribute their own wild yeasts that ferment the sugars present in the blend.
The fermented Tepache is then added to their base kombucha as a flavoring, the result of which being a fruity, spiced non-alcoholic cocktail that immediately transports you to tropical breezes, beachfront hammocks and the warm sun on your skin.
