Stinging Nettle, with its distinctive serrated leaves and fine, hair-like structures, is a hardy and resilient herb. The leaves, when uncooked, deliver a sting upon contact, but lose their biting qualities once heated. This herbal powerhouse is frequently used in cooked dishes such as soups, stews, and teas, lauded for its earthy flavor which resembles that of spinach. Stinging Nettle can also be dried and used as a potent and nutritive herbal supplement. Its robust taste makes it excellent for infusing into broths or as a nutritious boost in green smoothies. Rich in vitamins A, C, and K, as well as several minerals and amino acids, Stinging Nettle may support overall health and well-being.
Nicolas Donck, a Belgium native, relocated to Georgia and started Crystal Organic Farm back in the mid-90's with a mission to grow healthy, organic produce. Many say he is singlehandedly responsible for introducing Atlantans to many plants of the endive and chicory varieties that were already popular in Belgium. Along the way, Nicolas helped found the Morningside Farmers Market and eventually met the love of his life, and now farm partner, Jeni Jarrard-Donck. Jeni brings an extensive knowledge of medicinal herb cultivation and usage to the partnership, making Crystal Organic one of the most well-rounded and diverse farms in the State.
