Italian Eggplant captures the essence of Mediterranean cuisine with its classic pear shape and vibrant, deep purple skin. This staple variety is generally smaller and slightly rounder than its larger counterparts, boasting a thin, delicate skin that cooks to perfection. With sweet, fine-grained flesh and fewer seeds, it adds a succulent, buttery texture to culinary creations. Whether grilled for a smoky char, diced for a hearty ratatouille, or sliced for a traditional eggplant parmesan, the Italian Eggplant melds harmoniously into a multitude of dishes. In addition to its gastronomic versatility, this vegetable is a wholesome choice containing fiber, vitamins B1 and B6, potassium, and antioxidants, ideal for those seeking a healthful addition to their diet.
Nicolas Donck, a Belgium native, relocated to Georgia and started Crystal Organic Farm back in the mid-90's with a mission to grow healthy, organic produce. Many say he is singlehandedly responsible for introducing Atlantans to many plants of the endive and chicory varieties that were already popular in Belgium. Along the way, Nicolas helped found the Morningside Farmers Market and eventually met the love of his life, and now farm partner, Jeni Jarrard-Donck. Jeni brings an extensive knowledge of medicinal herb cultivation and usage to the partnership, making Crystal Organic one of the most well-rounded and diverse farms in the State.
