Broccoli Greens are a hidden gem within the world of leafy vegetables, with broad, fleshy leaves that wrap around tight clusters of buds reminiscent of their close relative, the broccoli crown. These greens boast a vibrant, deep green hue and offer a flavor profile that is both slightly bitter and assertively earthy. The textured leaves have a robust quality, ideal for wilting down into a nutritious side dish or for adding a cruciferous kick to smoothies, stir-fries, and soups. When lightly steamed or sautéed, Broccoli Greens become tender, releasing a hint of nutty sweetness that complements a medley of flavors – from garlic and olive oil to a tangy vinaigrette. Rich in vitamins A, C, and K as well as calcium, they are a healthful addition to any meal that calls for a hearty green.
