Green garlic is the young, immature stage of garlic before the bulbs fully develop. It has a long, slender stalk with a white base that transitions into green leaves. The entire plant is edible and is commonly used in cooking, often as a substitute for mature garlic or scallions. Green garlic is typically harvested in the spring and early summer, before the garlic plant reaches full maturity.

Their vision is to see the farm continue on in perpetuity under a unique model of worker-owners. The 70 acre farm was started and is run by a team of five owners: Joe Reynolds, Judith Winfrey, Demetrius Milling, Monica Ponce, and Russell Honderd.
