Warm Tatsoi and Romaine Heart Salad

Thanksgiving doesn’t have to be all fatty foods!

Ingredients

  • 1 bunch of Tatsoi
  • 1 head of Romaine hearts
  • 1 cup of chopped shitake mushrooms
  • 1 half cup quick pickled radishes (can be made by soaking sliced radishes in garlic rice vinegar overnight)
  • Sliced almonds
  • Diced seasonal fruit (persimmon is an excellent choice)
  • Garlic finely chopped
  • Olive oil
  • Salt and pepper

Instructions

Step 1
In a large bowl combine tatsoi leaves, romaine hearts and mushrooms in a large bowl. Season with salt, pepper, olive oil and garlic.

Step 2
On high heat pan sear the tatsoi and romaine hearts, until leaves are wilted.

Step 3
As leaves are cooking pour some of the radish brine into the pan for extra flavor.

Step 4
Top salad with radishes, fruit and slice almonds and serve.
