These garlicky green beans with breadcrumbs and shaved parmesan are the perfect side to any meal!

Garlicky Green Beans

Ingredients

- 1 tablespoon olive oil
- 1 pound green beans, washed and trimmed
- 3 large garlic cloves, smashed and peeled
- ½ cup water or unsalted stock
- zest and juice from 1 large lemon
- Kosher salt and black pepper, to taste
- Toasted breadcrumbs, optional
- Shaved parmesan, optional
Preparation
- Heat the olive oil in a large skillet set over medium-high heat. Add the green beans and toss to coat in the olive oil.
- Grate in the garlic cloves using a microplane, or just roughly chop and add to the skillet.
- Pour in the water or stock, reduce heat to medium and cover. Let green beans steam, covered, until water has mostly evaporated, about 5 minutes.
- Remove cover and continue cooking green beans until all the water has evaporated. This should only take a few minutes over medium heat. The beans should still have their bright green color to them.
- Grate in the lemon zest, and squeeze in the lemon juice over the green beans. Toss to combine.
- Season with salt and black pepper to taste. Garnish with toasted breadcrumbs and shaved parmesan if using, and serve immediately.
