Cauliflower Gratin

We’ve got some amazing local cauliflower varieties coming in from Fry Farm over the next couple weeks, so we wanted to share the stellar Cauliflower Gratin recipe with y’all! This dish is hearty, delicious and makes a great vegetarian main dish. It’s easy enough to whip together on a weeknight, but special enough to make for company. Enjoy with a refreshing salad or sautéed winter greens for a balanced meal. Check out our Greens selection for some ideas.
Ingredients
- 1 cup heavy cream
- 4 tablespoons unsalted butter
- 2 garlic cloves, finely grated
- Salt & black pepper
- 2½–3-pound cauliflower, leafy green parts removed
- ½ small sweet or yellow onion, very thinly sliced
- 2 cups white cheddar cheese

Instructions
Step 1
Preheat oven to 425 degrees.
Step 2
Bring cream, butter and garlic to a simmer in a small pot over medium heat. Season with salt and pepper and remove from heat.
Step 3
Slice the cauliflower into ½-inch-thick slabs (some of the bits will fall away and crumble into tiny florets; this is fine).
Step 4
Place one third of the cauliflower slabs in the bottom of a 9-in cake pan (or another 2 qt baking dish), starting with the smaller more crumbly bits. Top with 1/3 of the sliced onion and 1/3 of the cheese. Repeat two more times to create three layers, making sure to finish with cheese.
Step 5
Pour the cream-butter-garlic mixture over the cauliflower layers.
Step 6
Cover with aluminum foil and bake until cauliflower can be easily pierced with a fork, about 25-30 minutes.
Step 7
Uncover, then bake until top is golden and bubbly, about 15 minutes. (The mixture may look a bit runny when you remove it from the oven, but will firm up a bit after it sits at room temperature for a few minutes.)
Step 8
Let cool slightly, then eat up!
