Dino Kale, also known as Lacinato or Tuscan Kale, boasts dark blue-green leaves with a distinctly bumpy texture that resembles prehistoric dinosaur skin, hence its nickname. Each leaf is long, narrow, and firm to the touch, gradually tapering to a point at the end. Renowned for its earthy flavor that is more subtle than other kale varieties, it develops a nuttier profile when cooked. Dino Kale is packed with nutrients, including vitamins A, C, and K, and its sturdy leaves hold up well in cooking, making it ideal for sautés, soups, and stews. This hearty green is also excellent in raw dishes; massage it with a bit of olive oil for a tender, flavorful addition to salads.

About the Producer
McClellan Organics was established in 2008 by Bryan McClellan and his wife Katie. The farm consists of 352 acres certified organic. Both grew up in agricultural families and wanted to carry on the farming tradition for future generations. After years of learning about organic farming and developing a great appreciation for it, they started the business venture of McClellan Organics. Although they started out small, the farm has quickly grown and now offers a wide assortment of certified organic fruits and vegetables. After having their children Reed and Corinne, and because of the continued growth of the farm, Katie, who initially continued her profession as a speech therapist, now works full time on the farm as book/record keeper. Growing organically is not always easy and has its challenges like anything else. However, Brian and Katie have learned to embrace those challenges to provide a product that is better for us to consume and is beneficial to our environment. They take pride in contributing to the health and well being of others while preserving the land for future generations and hope you enjoy eating our produce as much as we enjoy growing it! Explore >
