Fresh Pink Eyed Peas, a Southern favorite, are distinguished by their pale, creamy hue and the signature pink-black spot crowning the eye. These field peas showcase a more delicate flavor compared to their black-eyed cousins, offering a subtle sweetness that makes them highly versatile in a variety of dishes. The peas have a firm yet tender texture that holds up beautifully when cooked, adding a satisfying bite to salads, stews, and traditional Southern recipes like Hoppin’ John. They are typically enjoyed in the summer months and can be easily shelled by hand. Nutritious and high in fiber and protein, Pink Eyed Peas are a wholesome addition to any plate, providing a mouthwatering taste of Southern comfort with each spoonful.
Mitch Lawson's farm, located on the fertile flood plains of the Oostanuala River in Northwest Georgia, has been growing certified organic produce since 2004. Very few other Georgia farms have such a longstanding tenure of organic certification. The 30 acres under cultivation is a lot to manage, but Mitch and his team make it look easy! Growing from only 2 acres back in the mid 2000's, Rise 'N Shine now produces over 40 types of organic fruits and veggies each year.
