Frisee Lettuce, a form of chicory, is renowned for its delicate, slender leaves tinged with a gentle yellow at the core and transitioning to a light green. The frilly edges give way to a mildly bitter flavor that adds a pleasant complexity to salads and garnishes. Each leaf boasts a crisp texture that pairs well with the creamy richness of dressings like classic vinaigrettes or blue cheese. Frisee Lettuce is often a star in the sophisticated French frisée aux lardons salad and mixes beautifully with other greens to create a visually stunning and texturally varied salad base. Besides its culinary uses, this leafy green includes nutrients such as folate, vitamin A, and vitamin K.
Nicolas Donck, a Belgium native, relocated to Georgia and started Crystal Organic Farm back in the mid-90's with a mission to grow healthy, organic produce. Many say he is singlehandedly responsible for introducing Atlantans to many plants of the endive and chicory varieties that were already popular in Belgium. Along the way, Nicolas helped found the Morningside Farmers Market and eventually met the love of his life, and now farm partner, Jeni Jarrard-Donck. Jeni brings an extensive knowledge of medicinal herb cultivation and usage to the partnership, making Crystal Organic one of the most well-rounded and diverse farms in the State.
