Celtuce Lettuce, a distinctive and intriguing vegetable, boasts elongated stems tinged with hues of jade and crowned with a bouquet of tender leaves. The stem, or stalk, is the star of this plant, exhibiting a texture that's both crisp and succulent with a flavor reminiscent of a cross between celery and a mild nuttiness. Celtuce, also known as stem lettuce or Chinese lettuce, offers versatility in the kitchen. The thick, crunchy stems can be sliced for stir-fries or salads, adding a refreshing crunch, while the leaves may be sautéed or used as a fresh green similar to romaine or iceberg lettuce. With a noteworthy vitamin C content and hosting an array of nutrients such as dietary fiber and calcium, Celtuce Lettuce brings nutritional value along with its unique culinary qualities.
Cut off the tops and keep separate from the stems. Store the stems and leaves in separate ziplock bags or airtight plastic containers. In the crisper drawer of the refrigerator, celtuce will keep for 2 to 3 days.
Just a few minutes down the road from the Fresh Harvest office and warehouse, there's a small piece of property on a pond in the woods. Farmer Cody Burnett faithfully manages the cultivation of this land with his team of farmhands from the Clarkston community. Together they plant and harvest an inordinate amount of organically grown produce, both for Fresh Harvest customers and for the Share the Harvest Market in Clarkston. Growing culturally relevant food for refugees from around the world means that the Fresh Harvest Garden looks a bit different than most Georgia farms, and we wouldn't have it any other way.
