Tokyo Bekana is a delicate Asian green with a mild and sweet flavor, perfect for those who enjoy subtler tastes in their leafy vegetables. Its appearance is characterized by loose heads of pale green, ruffled leaves that are tender and crisp, almost lettuce-like in their texture. Often found in Asian cuisine, Tokyo Bekana can be eaten raw, adding a gentle, crisp sweetness to salads and sandwiches. Alternatively, it can be briefly cooked; its leaves wilt gracefully, making it an excellent addition to stir-fries, soups, and sautéed dishes. This green is not only vibrant and pleasing to the eye but also brings a light and refreshing component to a variety of meals.

About the Producer
Just a few minutes down the road from the Fresh Harvest office and warehouse, there's a small piece of property on a pond in the woods. Farmer Cody Burnett faithfully manages the cultivation of this land with his team of farmhands from the Clarkston community. Together they plant and harvest an inordinate amount of organically grown produce, both for Fresh Harvest customers and for the Share the Harvest Market in Clarkston. Growing culturally relevant food for refugees from around the world means that the Fresh Harvest Garden looks a bit different than most Georgia farms, and we wouldn't have it any other way. Explore >
