Ginger-Rosemary Lemon Cocktails

The perfect cocktail to help you cool down in the heat.
Ingredients
- 1 cup honey
- 1 cup water
- 1 (2 inch) piece of fresh ginger, sliced into thin coins (no need to peel)
- 2 sprigs fresh rosemary + additional for garnish
- 1 cup fresh lemon juice (from about 5 lemons)
- 1 1/2 cups vodka

Instructions
Step 1
Add strawberries, sugar and lemon juice + zest to a pan or pot wide enough to fit the mixture in a layer or two
Step 2
Bring mixture up to boil, reduce to a bare simmer and let simmer gently for about 30 minutes, stirring occasionally to prevent scorching, until mixture has thickened into jam
