Korean Beef Bowls

An easy dinner perfect for a busy night.
Ingredients
- 1/4 cup maple syrup
- 1/4 cup reduced sodium soy sauce
- 2 teaspoons toasted sesame oil
- 1/2 teaspoon crushed red pepper flakes
- 2 teaspoons freshly grated ginger
- 3 scallions, minced, white and light green parts only
- 1/2 teaspoon sesame seeds
- 1 tablespoon olive oil
- 1/2 of a yellow onion, finely chopped
- 3 clove of garlic, minced
- 1 pound ground beef
- 1 cup cilantro, minced
- turnip noodles, rice noodles or grain of choice for serving

Instructions
Step 1
In a bowl whisk together the maple syrup, soy sauce, sesame oil, crushed red pepper flakes, ginger, scallions, and sesame seeds until well combined. Taste test and adjust as needed.
Step 2
Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook, stirring often until fragrant, about 3 minutes. Stir in the ground beef and use a wooden spoon to help break it up into pieces. Cook, stirring often until browned on all sides, 3-5 minutes. Drain off any excess fat and then add the sauce ingredients to the pan. Simmer for about 1 minute. Remove from the heat and stir in the cilantro. Serve the beef over noodles or grain of choice and enjoy.
